Upletena peciva / Braided Pastry

Potrebno:

  • oko 20gr svežeg kvasca
  • 1 kašičica šećera
  • 300ml toplog mleka
  • 100ml ulja
  • 1 jaje
  • 1 belance
  • 1 kašika soli
  • 1 puna kašika kisele pavlake
  • oko 650-700gr brašna
  • oko 50gr istopljenog maslaca



za premazivanje:
  • 1 žumance
  • susam
Priprema:
U malo mleka sa šećerom i kašičicom brašna razmutiti kvasac i ostaviti ga da zapeni. 
Pomešati ostatak mleka, ulje, jaje i belance, so, pavlaku, narasli kvasac i sa brašnom zamesiti testo. Testo treba da bude mekano, ali da se ne lepi. Pokriti vanglu i ostaviti testo da duplo naraste.
Naraslo testo podeliti na manje loptice i na pobrašnjenoj površini ih razvući ovalno. Po sredini testa napraviti rezove, premazati testo maslacem, a onda uviti po dijagonali. Konačno, sve uviti u oblik puža. Poređati peciva na pleh obložen papirom za pečenje i ostaviti ih da rastu dok se ne zagreje rerna na 200C. Premazati ih žumancetom i posuti susamom. Peći da lepo porumene.

Braided Pastry

Ingredients:
  • about 20gr fresh yeast
  • 1 tsp sugar
  • 300ml warm milk
  • 100ml oil
  • 1 egg
  • 1 egg white
  • 1 tbsp salt
  • 1 full tbsp sour cream
  • about 650-700gr flour
  • about 50gr melted butter
and for brushing:
  • 1 egg yolk
  • sesame seed
Directions:
In  a little milk with sugar and one teaspoon of flour dissolve the yeast and let stand until foamy.
Mix the rest of the milk, oil, egg and egg white, salt, sour cream, yeast mixture and with flour knead the dough. The dough should be soft, but no sticky. Cover the bowl and let stand until the dough is doubled in size.
Divide the dough in balls and on a floured surface roll them into an oval, cut the center into stripes and brush it with melted butter. Roll the dough diagonally and finally roll it into the shape of the snail. Arrange them on the pan lined with parchment paper and let rest until the oven is heated to 200C. Brush them with egg yolk and sprinkle with sesame seed. Bake until golden brown.
